Drunken Salmon | A Maxim Proper signature. Pan-seared salmon accompanied by shrimp and finished with a white wine, butter reduction. Served over creamy garlic mashed potatoes and lemon-garlic string beans.

Chicken Provençal Proper| Pan-seared chicken breast topeed with a garden-fresh reduction of tomatoes, bell peppers, capers, garlic, sweet onions and herbs. A soulful twist on a Mediterranean classic, done the Proper way. Served with orzo pasta infused with fresh herbs and lemon-garlic string beans.
